Long time no type! So much has been going on. I know. I know. I’ve said it all before. HOWEVER, this time I can really say a lot has been going on. It’s been 30 days of constant stuff. Great stuff, but stuff nonetheless. Every day is an adventure where orders are concerned. Some of the requests I receive border the outrageous and keep the busy factor high. There have been these weekly hob-nob events that are totally awesome, especially when you’re hungry and don’t necessarily want to pay for a 4 or 7 course meal. I went to 1 event where wine was served with every course. I meant to take pictures of each course for you, but uhhhhh, let’s just say that the wine made me forget to take a photo or caused me to take a photo with someone else’s camera phone (No, I don’t know why and I did it without telling them). I call such confusion and muddled thinking “Pinot Grigio”. By the 3rd course, people were funnier than they’ve ever been, the food began to taste phenomenal, and I felt like breaking out into some serious JLo dance moves.

April 29th, the world expanded by a least 1 and that was quite an experience. It was the first birth I almost witnessed. However, the stubborn little mama insisted that the doctor come in to get her because she certainly wasn’t coming out without a fight. I don’t have any photos just yet. She smiles in her sleep a lot, so I’m waiting on the next sweet dream to snap a photo.
Daily Candy wrote up THE CUTEST article about myself, Sift! and the great things going on here. I was elated. I met a lot of cool people almost immediately after and the party hasn’t stopped. Thank you, Daily Candy!!!
THEN, Robin Spizman, the “Gift Guru” at Star 94 and on the Today Show featured Sift! I nearly dropped the phone when she called me – personally! She said wonderful things about my carrot cake, “Care Packages“, chopped chocolate cookies, and so much more.
There’s more, but I’ll fill you in as time goes on. Just know that with all of the wonderful attention (in some cases, I didn’t know the attention was there until calls began to come in), came more responsibility.

For now, let’s take these Zucchini Pancakes for a test drive.
They are something like the Corn and Scallion Pancakes from a while back only in that they are meant to be an alternative to the regular dinner rolls. I dare anyone to eat these with syrup!
Let’s get started!
First, you’ll need 1/4 cup grated carrot, 3/4 – 1 cup chopped red onion, and 1 1/4 cup grated zucchini (fresh). Then, in a different bowl, combine 3/4 cup all-purpose flour and 3/4 teaspoon baking powder.
Crack the 2 eggs into a medium bowl and then whisk in 1 cup milk, 2 tablespoons olive oil, 1 teaspoon salt, and 1 teaspoon sugar. Now is about the time to begin heating your griddle (350°F) or skillet to medium heat. Butter or oil your skillet or griddle as well.
Now, all of that stuff you chopped and grated in the beginning can be added to the egg mixture including 1/2 cup of pepper jack cheese. Try a mixture of mozzarella, parmesan, or swiss if you like!
Now add the flour mixture and whisk until smooth.
Pour dollops of batter into the skillet/onto the griddle and allow to cook until the edges are puffed and the bubbles begin to burst. I like to brown mine pretty well with a few black spots here and there.
