Strawberry Milk Recipe

Hey! What're doing? Me? Still in a bit of a stupor from this morning's earthquake here in the valley, I decided to upload this Strawberry Milk. As if my house shaking was not enough chaos, I also decided to create, edit, and upload my very first video. Bear with me as, again, it's my very first video.

But first, this milk. It's full of fruity goodness, can be altered to be sweet, or not so much, and ANY milk will do. I was never really fond of the taste of cow's milk, and always found goat's milk to be a bit pungent - tasty, but pungent. Our strawberry milk is made with almond milk, but cashew milk offers a pleasant backdrop.

A little secret - our favorite strawberry milk powder may have met it's match, but that doesn't mean I won't add it to this. It just has to be done incrementally.

Here's the thing - it can actually distort that fresh strawberry flavor making it taste, well... oh so faux. So if you must, start with a teaspoon or two, and go from there. Otherwise, this recipe is for the purist inside of us all. You should be able to go without it!

Strawberry Burnt Vanilla Milk

Homemade strawberry syrup, burnt vanilla, chopped strawberries, and milk. Better than you remember!

Ingredients

Strawberry Syrup

  • 1 lb fresh or frozen (& thawed) strawberries
  • 1/3 cup water
  • 1/3 cup light corn syrup
  • 1/2 cup sugar
  • 1 tsp lemon juice
  • 1/4 tsp burnt vanilla, or extract
  • 1 vanilla bean open & scraped

Strawberry Milk

  • 1 lb fresh strawberries
  • 2 cups milk of your choice

Instructions

Strawberry Syrup (makes about 2 cups)

  • Bring all of the ingredients to a boil in a saucepan over medium-high heat. Then simmer for on low for 20 minutes.
  • Allow syrup to sit for an addition 1-3 hours for best flavor extraction.
  • Strain, pressing on solids.
  • Cover and chill until ready to use.

Strawberry Milk

  • Chop strawberries into bite size pieces.
  • For every 2 cups of milk, add 1/2 cup syrup and 1/2 pound of fresh chopped strawberries.
  • Drink it!

Notes

My recipe for burnt vanilla is here on the blog. Just scroll down on the posts page. If you don't feel like the process burnt vanilla entails, then use the alternatives - a vanilla bean or extract.If you have a vanilla bean, use it instead of extract. Vanilla fiend? Do both!
Also, for a more concentrated syrup (lasts longer, and has a more concentrated strawberry flavor), double the ingredients and boil the syrup longer and at low heat. Keep a close eye on it as it can burn if not stirred periodically. Starting with more liquid will not only end with more syrup, but it will result in a better concentration of flavor due to the longer cook time.
